Van Life: What do you eat?!

Great question, we’re still figuring that out!

When we go camping, we like to make steak and potatoes over the fire, then use the leftovers for breakfast scrambles in the morning. Sometimes we’ll do smoked sausage, bacon or ham too – but meat, potatoes and sometimes onion and peppers (if we remember) is a staple dinner for us.

We switch it up by sautéing it all in a pan, roasting in aluminum foil packs or grilling directly on the grate. But no matter how we make it, it’s always good and filling!

Day to day though we do end up eating out quite a bit. And it’s something we’re working on! Thankfully we have power in the van for a little electric skillet, but without a sink, cooking meals in the van every night gets messy fast.

So until we figure out a solution, we tend to eat out a bit but we also stock up on quick snacks like tuna and crackers, protein bars, protein shakes, fruit, vegetables and of course a healthy dose of fun snacks like candy. These things help fill us up until our next meal or they work as a quick snack in between destinations. This isn’t to say they’re the healthiest (460g of sodium in the pictured Tuna Salad) but they’re often high protein and filling.

The best kind of meals are when we get invited to friends and family’s houses! There’s nothing quite like a home cooked meal made with love, enjoyed on a big comfy couch!
